Ethan's Pita Recipe

Ingredients:
Water
Olive Oil
Salt
Yeast
White Flour
Corn Meal


  1. Mix 2 tablespoons yeast with 1/2 cup lukewarm water,
  2. Add 1 1/2 cups more lukewarm water, 1/4 cup olive oil, and 2 teaspoons salt.
  3. Add about 5 cups of white flour gradually.
  4. When the dough begins to come away from the bowl, turn it out and knead, adding more flour.
  5. Let rise for 1 to 2 hours.
  6. Punch down and form into 8-10 balls. Set the balls on a table and cover with plastic wrap. Let them sit for 30 minutes.
  7. Dust two baking pans with corn meal. Divide dough into 8-10 pieces and roll out each piece into a circle about 1/8 inch thick. Place the circles on the pans and let them rise for another 30 minutes.
  8. Preheat oven to 500. Place pita on the lower rack for 5 minutes, and then move to a higher rack for 3 minutes.
